Latkes, Yiddish for pancakes, are truly a taste of Hanukkah but have quickly become a crave-worthy food the year ‘round. Now showing up on menus in trendy restaurants across the country, the first latkes were most likely made of cheese and later, grains, but are now immortalized in their potato format. For all lovers of delectable fried treats, author Jayne Cohen (Jewish Holiday Cooking) will share latke lessons, including oil and frying tips; how to prepare latkes ahead. You’ll sample some amazing (and surprising) varieties of latkes and create garlic-rosemary potato latkes to call your own.
