Crafting Quality at Origin Coffee Tour - Panama Highlands May 4-6, 2009 Lead Trainer: Willem Boot A three-day coffee course in the highlands of the beautiful coffee areas of Volcan, Piedra Candela, Santa Clara and Boquete. The course includes visits to coffee farms, mills and cupping labs. A unique opportunity to learn about coffee farming and processing! All instruction is in English and optionally Spanish. During this course we will focus on the critical parameters that determine quality at the farm and at the mill. Day 1 - Meet at Hotel Dos Rios, Volcan and travel to Piedra Candela and Santa Clara regions with visits to and cupping sessions at Cafe Eleta and Santa Teresa Estate. Day 2: Visit to two spectacular farms in the Volcan region followed by a cupping session. Inspection of and hike into Finca Sofia, a new (Geisha) coffee farm. Travel to Boquete during the afternoon. Day 3: Visit to the organic coffee farm Los Lajones and to Elida Estate. Cupping session with various price winning Boquete coffees. Lodging is in the rustic Hotel Dos Rios (Volcan) and in the Hotel Isla Verde (Boquete).
